A dry, minerally line and length take on Australian sparkling wine with fruit sourced from the Ducks Lane vineyard in Seville, Coombe Farm in Coldstream and Dalry Road in Healesville. It’s a blend of 74% Chardonnay and 26% Pinot Noir that spends 48 months on lees. The dosage is 4.5g/l.
Light in colour with a fervent yet fine bead. Freshly squeezed lemon, oyster shell, pastry dough and sour green apples on the nose and palate. Mild nuttiness and spice. The finish is chalky and quite grippy – something I suspect will polarise drinkers. I don’t mind it one bit. 92 Very Good
