Wild fermented in barrel, lees stirred, 100% French oak (10% new), bottled unfiltered. Smells awesome, tastes great. Nuts, oxidised yellow apple flesh, stonefruits, honeycomb, spice and stones. It’s yeasty/cidery with a riveting mouthfeel – creamy, leesy weight and phenolics that possess a rare degree of finesse. More and more (ginger) spice as it unveils itself. Character and length.
