Within the ‘Art vs Science’ dichotomy, the Odeon Riesling illustrates the side of ‘Art’:
“The specific techniques employed in the making of this wine must remain, in some part, clandestine, but in essence, the basis is to go against the rules & framework of my winemaking education, against the accepted science using techniques reminiscent of ancient times”
Indigenous yeasts, gross lees, battonage, no additions or finings, no active stabilisation – these were the choices (carefully, thoughtfully) made by David Bowley in the lead up to bottling. They have produced a wine which is more exciting, more immediately approachable, more textured and of even higher quality…at least as far as I’m concerned.
A spellbinding blend of citrus blossom, lavender, juniper berry, fennel, jasmine, bread, curd and funk on the nose. It’s as if you can smell the depth. The palate, whilst still in the process of coming together, doesn’t disappoint. Orange citrus is accented and a seam of minerality is sheathed by a gentle mouthfeel. It seems softer and more bitter-sweet than the standard Riesling but in no way does it lack definition. Truly exciting. Excellent – Exceptional
