I don’t have any technical info on this…but I like the wine. A lot.
It’s extremely pale in the flute, very much reflecting the understated elegance on the palate. The bead is vigorous but lovely and fine, culminating in a dreamy, soft mousse. A shy nose invites close inspection. Green apples and lime/lemon citrus are the first aromas to make themselves known but there is an attractive ‘mushrooms on toast’ complexity in the background. It smells nutty too.
The fluffy, pillowy mouth feel is a real highlight, with the acidity avoiding harshness whilst still enlivening and cleansing the palate. It flows briskly and effortlessly concludes with lingering notes of brine, minerals, hazelnuts and walnuts alongside some mild apple skin tannin. The wine reminded me somewhat of a Waldorf salad, albeit light on the mayo and without the inherent crassness of that dish.
An apéritif style Sparkling wine; dry, delicate and refreshing. It did work rather well with oysters though.

Sorry JP – RRP is $35. Tech info: whole bunch pressed, 90% chardy, Single vineyard production from Mendoza plantings. Only free run fraction @ 480L/tonne. Cold fermented on full solids @20C. No malo. Bottle ferment and on tirage lees almost 3 years. pH 2.9, TA 11 g/L. Dosage 3 g/L only.
Available at Vic Art Centre and MLG cellar door. Contact Anne 03 5354 3207 limited availability. Only 125 dozen made. 2009 will be next release in 2012. None made in 2008 due to heat wave.
